Ingredients
  

  • Base Ingredients (for all): 1 pound ground beef (80–90% lean), 1 small onion (diced), 2 cloves garlic (minced), salt, black pepper, olive oil or neutral oil.
  • Skillet Beef Tacos: 2 teaspoons chili powder, 1 teaspoon ground cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon oregano, 1/4 teaspoon cayenne (optional), 1/3 cup water, 8 small tortillas, toppings like shredded lettuce, diced tomato, shredded cheese, salsa, sour cream, lime.
  • One-Pot Beef and Rice: 1 cup long-grain rice (rinsed), 1 3/4 cups beef or chicken broth, 1 cup frozen mixed vegetables, 1 teaspoon paprika, 1 teaspoon soy sauce (optional), 1/2 teaspoon dried thyme or Italian seasoning.
  • Simple Beef Pasta: 8 ounces short pasta (penne, rotini, shells), 1 jar (24 ounces) marinara sauce or 3 cups crushed tomatoes, 1 teaspoon Italian seasoning, red pepper flakes to taste, 1/2 cup shredded mozzarella or Parmesan (optional), fresh basil or parsley (optional).
  • Equipment: Large skillet, pot for pasta or one-pot recipe, spatula, measuring spoons, cutting board, knife.

Method
 

  1. Set out all ingredients so you’re not scrambling later. Rinse rice (for the one-pot recipe) and start heating water if making pasta.
  2. Dice onion and mince garlic. Warm a large skillet over medium heat with 1 tablespoon oil.
  3. Add onion to the skillet. Cook 2–3 minutes until softened. Stir in garlic for 30 seconds.
  4. Add ground beef. Break it up with a spatula. Cook 5–7 minutes until browned. Drain excess fat if needed.
  5. Season with chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Stir in 1/3 cup water.
  6. Simmer 2–3 minutes until saucy and flavorful. Taste and adjust salt or heat.
  7. Warm tortillas in a dry pan or microwave. Fill with beef and add toppings. Squeeze lime over the top for brightness.
  8. In the skillet, cook onion in a little oil for 2–3 minutes. Add garlic for 30 seconds.
  9. Add ground beef. Brown fully and drain excess fat if there’s a lot.
  10. Stir in paprika, thyme or Italian seasoning, salt, pepper, and soy sauce (optional).
  11. Add rinsed rice, frozen veggies, and broth. Stir, bring to a gentle simmer, then reduce heat to low.
  12. Cover and cook 15–18 minutes, until rice is tender and liquid is absorbed. If rice isn’t done, add a splash of water and cook a few more minutes.
  13. Fluff with a fork. Taste and adjust seasoning. Finish with a drizzle of olive oil or a squeeze of lemon if you like.
  14. Boil pasta in salted water according to package directions. Reserve 1/2 cup pasta water and drain.
  15. While pasta cooks, sauté onion in the skillet for 2–3 minutes. Add garlic for 30 seconds.
  16. Add ground beef and brown well. Drain excess fat if needed. Season with salt, pepper, Italian seasoning, and a pinch of red pepper flakes.
  17. Pour in marinara or crushed tomatoes. Simmer 5–7 minutes to meld flavors. Add a splash of pasta water if it gets too thick.
  18. Toss in the drained pasta. Stir to coat evenly. Add cheese if using and let it melt. Top with chopped basil or parsley.
