Prep the pan: Heat the oven to 350°F (175°C). Lightly grease a 6-inch round cake pan or line it with parchment.
Mix dry ingredients: In a bowl, whisk the whole wheat flour and baking powder until combined.
Mix wet ingredients: In another bowl, mash the banana.
Stir in the applesauce, egg, and melted coconut oil until smooth.
Combine: Add the wet mixture to the dry ingredients. Stir just until you no longer see dry flour. Fold in the blueberries gently.
Bake: Pour the batter into the pan and smooth the top.
Bake for 20–25 minutes, or until a toothpick comes out clean from the center.
Cool completely: Let the cake rest in the pan for 10 minutes, then transfer to a rack to cool fully. This helps the frosting stay put.
Frost (optional): Mix Greek yogurt and peanut butter until creamy. Spread a thin layer over the cooled cake and add a few blueberries on top.
