Lemon Chia Pudding Aesthetic - Bright, Fresh, and Effortlessly Pretty

Ingredients
  

  • 3 tablespoons chia seeds
  • 1 cup milk of choice (almond, oat, coconut, or dairy)
  • 1/4 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • Zest of 1 lemon (finely grated)
  • 2–3 tablespoons fresh lemon juice (about 1 lemon), to taste
  • 1–2 tablespoons honey or maple syrup, to taste
  • 1/2 teaspoon pure vanilla extract
  • Pinch of fine sea salt
  • Optional toppings: fresh blueberries or raspberries, thin lemon slices, coconut flakes, poppy seeds, granola, extra zest

Method
 

  1. Mix the base: In a medium bowl or jar, whisk together milk, yogurt, lemon juice, lemon zest, honey or maple, vanilla, and a pinch of salt until smooth.
  2. Add chia seeds: Sprinkle chia seeds over the liquid. Whisk well, making sure no clumps stick to the sides.
  3. Rest and re-whisk: Let the mixture sit for 10 minutes, then whisk again to break up any settling seeds. This helps ensure even, creamy texture.
  4. Chill: Cover and refrigerate for at least 2 hours, ideally overnight, until thick and pudding-like.
  5. Adjust consistency: If it’s too thick, stir in a splash of milk. If it’s thin, add 1 teaspoon chia seeds and chill 10–15 more minutes.
  6. Style it “aesthetic”: Spoon into clear glasses. Add a layer of yogurt or berries, then more pudding. Top with lemon zest curls, coconut, and a few berries.
  7. Serve: Enjoy cold with a drizzle of honey if you want a touch more sweetness.
