Healthy Street Corn Chicken Bowl - Fresh, Flavorful, and Easy

Ingredients
  

  • Chicken: 1 to 1.5 pounds boneless, skinless chicken breasts or thighs
  • Chicken marinade: 1 tablespoon olive oil, 1 teaspoon chili powder, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, black pepper, juice of 1/2 lime
  • Corn: 2 cups corn (fresh, frozen, or canned), charred in a skillet or on the grill
  • Street-corn sauce: 1/2 cup plain Greek yogurt, 1 tablespoon light mayo (optional for richness), juice of 1/2 lime, 1 clove garlic (minced), 1/2 teaspoon chili powder, pinch of salt
  • Bowl base: 2 cups cooked brown rice, white rice, or quinoa (or shredded romaine for a low-carb base)
  • Add-ins: 1 cup black beans (rinsed and drained), 1 cup cherry tomatoes (halved), 1/4 red onion (thinly sliced), 1 avocado (sliced or diced)
  • Cheese: 1/3 cup crumbled cotija or feta
  • Fresh herbs: 1/4 cup chopped cilantro
  • Finishing touches: Extra lime wedges, hot sauce or chili flakes (optional)

Method
 

  1. Marinate the chicken: In a bowl, mix olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice. Coat the chicken and let sit 15–30 minutes (or up to 8 hours in the fridge).
  2. Cook your base: Prepare rice or quinoa according to package directions. Fluff and keep warm, or chill if you prefer a cold bowl.
  3. Char the corn: Heat a large skillet over medium-high. Add corn (no oil needed if using a good nonstick). Let it sit to get some color, then stir. Cook 5–7 minutes until lightly charred. Season with a pinch of salt.
  4. Make the sauce: Stir together Greek yogurt, mayo (if using), lime juice, minced garlic, chili powder, and salt. Taste and adjust lime or salt.
  5. Cook the chicken: Grill or pan-sear over medium-high heat, 4–6 minutes per side for breasts (thighs may need a bit longer), until cooked through. Rest 5 minutes, then slice.
  6. Assemble the bowls: Divide rice or greens into bowls. Top with chicken, charred corn, black beans, tomatoes, red onion, and avocado.
  7. Add the finishing touches: Drizzle the yogurt-lime sauce over the top. Sprinkle cotija and cilantro. Add a squeeze of lime and a dash of hot sauce if you like heat.
