Garlic Bread Chicken Caesar Salad Subs (Easy, Cheesy & Flavor-Packed Recipe) - Weeknight Favorite

Ingredients
  

  • 4 soft sub rolls or small baguettes
  • 4 tablespoons unsalted butter, softened
  • 2–3 cloves garlic, finely minced (or 1 teaspoon garlic powder)
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)
  • 1 pound cooked chicken, shredded or sliced (rotisserie works great)
  • 1/2 cup Caesar dressing, plus more to taste
  • 1 teaspoon fresh lemon juice
  • 1/3 cup freshly grated Parmesan cheese
  • 4–6 slices mozzarella or provolone (or 1 cup shredded)
  • 2 cups chopped romaine lettuce
  • Optional add-ins: 4 slices bacon (cooked and crumbled), cherry tomatoes, red onion slivers, black pepper
  • Salt to taste

Method
 

  1. Make the garlic butter: In a small bowl, mix softened butter, minced garlic, and parsley. Season with a pinch of salt.
  2. Prep the rolls: Split the sub rolls lengthwise without cutting all the way through. Spread the garlic butter on the cut sides.
  3. Toast: Place rolls, cut side up, under the broiler for 2–4 minutes until lightly golden. Keep an eye on them so they don’t burn.
  4. Warm the chicken: In a skillet over medium heat, add the chicken and a splash of water or broth. Warm just until heated through. Season with a pinch of salt and black pepper.
  5. Cheese melt: Divide the warm chicken among the toasted rolls. Top with mozzarella or provolone. Return to the broiler for 1–2 minutes until the cheese melts and edges bubble.
  6. Toss the salad: In a bowl, combine romaine, Caesar dressing, lemon juice, and Parmesan. Toss until lightly coated. Add more dressing if you like it saucy.
  7. Assemble: Spoon the Caesar salad over the cheesy chicken. Sprinkle bacon or extras if using. Close the subs gently.
  8. Serve: Enjoy immediately while the bread is crisp and the cheese is melty. Add an extra drizzle of dressing if you’re feeling it.
