Soften the butter: It should be slightly cool but pliable. Press a finger into it; it should leave a gentle dent without sliding.
Cream the butter: In a stand mixer with the paddle (or a hand mixer), beat butter on medium speed for 2–3 minutes until pale and airy.
Scrape the bowl.
Add half the sugar: With the mixer on low, add about half the powdered sugar. Mix until mostly combined, then increase to medium and beat 1 minute.
Add vanilla and salt: Mix in vanilla and a pinch of salt. Taste after the frosting is finished and adjust salt if needed.
Add remaining sugar: Mix in the rest of the powdered sugar on low.
Once incorporated, increase speed to medium and beat 1–2 minutes. The mixture will look thick.
Adjust consistency: Add 1 tablespoon cream at a time, beating on medium-high for 30–60 seconds after each addition until fluffy and spreadable. For piping, keep it slightly thicker; for frosting cakes, a bit softer is ideal.
Whip for lift: Finish with a final 1–2 minutes on medium-high to trap air.
Scrape the bowl so no dense pockets remain.
Final taste and tweak: Add more vanilla for stronger flavor, a touch more salt to balance, or extra sugar to stiffen. If it gets too soft, chill 10 minutes, then rebeat.
