Prep the oven and pan: Preheat to 300°F (150°C). Lightly grease a 12-cup muffin tin.
Place a large baking dish on the lower rack and pour in a few cups of hot water to create gentle steam.
Sauté wet veggies if needed: If using mushrooms, onions, or bell peppers, sauté in a little oil until softened and moisture cooks off. Let cool slightly.
Blend the base: In a blender, add eggs, Greek yogurt, milk, salt, pepper, and garlic powder. Blend until completely smooth, 15–20 seconds.
This aerates the mixture for a fluffier bite.
Stir in cheese and mix-ins: Transfer the egg mixture to a bowl. Fold in shredded cheese and your cooled veggies or cooked meats.
Fill the cups: Divide evenly among the muffin cups, filling each about 3/4 full. Give the tin a gentle tap to release air bubbles.
Bake low and slow: Place the muffin tin on the middle rack, above the steaming pan.
Bake 18–24 minutes, until the centers are just set and barely jiggle.
Rest and release: Let the egg bites cool in the pan 5 minutes. Run a thin knife around the edges and lift out. They’ll firm up as they cool.
Serve: Enjoy warm or at room temp.
Add a sprinkle of chives or hot sauce if you like.
