Cottage Cheese Egg Wrap - A Quick, Protein-Packed Breakfast

Ingredients
  

  • 2 large eggs
  • 1/3 to 1/2 cup cottage cheese (2% or 4% for creaminess)
  • 1 tablespoon finely chopped chives or green onion
  • 1/4 cup diced bell pepper or cherry tomatoes (optional)
  • Handful of baby spinach, chopped (optional)
  • 1 small tortilla or wrap (low-carb or whole wheat, optional)
  • 1 teaspoon olive oil or butter for the pan
  • Salt and black pepper, to taste
  • Pinch of red pepper flakes or a splash of hot sauce (optional)

Method
 

  1. Prep the filling: In a small bowl, whisk the eggs with a pinch of salt and pepper. Stir in the cottage cheese, chives, and any optional veggies. The mixture should look slightly thick and creamy.
  2. Heat the pan: Warm a nonstick skillet over medium heat and add the olive oil or butter. Swirl to coat.
  3. Cook the egg base: Pour in the egg mixture. Let it sit for 10–15 seconds, then gently push the edges toward the center with a spatula, letting the uncooked egg flow to the edges.
  4. Set and soften: Lower the heat to medium-low. Continue cooking until the eggs are just set and still a little glossy, about 2–3 minutes. Avoid overcooking to keep it tender.
  5. Wrap it up: If using a tortilla, place it directly on top of the set eggs in the pan and press lightly. Cook for 15–30 seconds so it adheres. Flip the whole thing onto a plate, tortilla side down, and roll it up. If skipping the tortilla, slide the egg round onto a plate and roll it like a wrap.
  6. Finish and serve: Add red pepper flakes or hot sauce if you like. Slice in half and serve warm.
