Cottage Cheese Egg Toast – A Quick, Protein-Packed Breakfast

Ingredients
  

  • 2 slices sturdy bread (sourdough, multigrain, or thick-cut sandwich bread)
  • 1/2 cup cottage cheese (small curd works best; 2% or whole milk)
  • 2 large eggs
  • 1–2 teaspoons olive oil or softened butter
  • Salt and black pepper, to taste
  • Optional toppings: red pepper flakes, everything bagel seasoning, chives, dill, lemon zest, hot honey, or sliced cherry tomatoes

Method
 

  1. Prep the bread: Lightly brush or spread the bread with olive oil or butter on both sides. This helps the edges toast up crisp and golden.
  2. Mix the cottage cheese: In a small bowl, stir the cottage cheese with a pinch of salt and pepper. For a smoother texture, mash gently with a fork to break up large curds.
  3. Make a “well” for the egg: Spoon the cottage cheese onto each slice, spreading it to the edges. Use the back of the spoon to create a shallow well in the center so the egg stays put.
  4. Add the eggs: Crack one egg into each well. If your eggs are large and the bread is small, crack into a ramekin first, then pour in slowly.
  5. Season: Sprinkle with salt, pepper, and any dry seasonings you like—everything bagel seasoning is a great choice.
  6. Cook: Choose one method: Oven (most reliable): Place the toasts on a parchment-lined sheet. Bake at 400°F (200°C) for 10–14 minutes, until whites are set and yolks are as runny or firm as you prefer.
  7. Air fryer: Air fry at 370°F (188°C) for 7–10 minutes. Check at 7 minutes for runny yolks.
  8. Stovetop, covered: Heat a nonstick pan over medium-low. Add toasts, cover with a lid, and cook 8–12 minutes until the egg sets. Keep heat low to avoid burning the bottoms.
  9. Finish and serve: Add fresh herbs, a pinch of chili flakes, or a drizzle of hot honey or olive oil. Serve immediately while the toast is crisp.
