Whisk the eggs. Crack eggs into a bowl. Season with a pinch of salt and pepper.
Whisk until the yolks and whites are fully combined and slightly frothy.
Fold in cottage cheese. Stir in the cottage cheese gently. You want it incorporated but not overmixed. The small curds should still be visible.
Heat the pan. Warm a nonstick skillet over medium-low heat.
Add butter or oil and let it melt until it lightly coats the pan.
Cook low and slow. Pour in the egg mixture. Let it sit for 10–15 seconds, then use a silicone spatula to push the eggs from the edges toward the center, forming soft folds.
Add extras, if using. When the eggs are about 70% set, fold in quick-cooking add-ins like chopped herbs or spinach. Avoid watery ingredients at the start to keep eggs tender.
Finish just shy of done. Remove from heat when the eggs are still slightly glossy.
Residual heat will finish cooking. Taste and adjust salt and pepper.
Serve. Spoon onto toast or a tortilla, or enjoy as-is. Add toppings like avocado, chili flakes, or a sprinkle of Parmesan for extra flair.
