Cottage Cheese Egg Bites High Protein - Easy, Make-Ahead Breakfast

Ingredients
  

  • Large eggs (8)
  • Cottage cheese (1 cup; 2% or 4% for best texture)
  • Shredded cheese (1/2 cup; cheddar, mozzarella, or Monterey Jack)
  • Greek yogurt or milk (2–3 tablespoons; optional for extra creaminess)
  • Vegetables: chopped spinach (1 cup), bell pepper (1/2 cup), and green onions (2 stalks)
  • Cooked protein: diced turkey bacon, bacon, ham, or chicken sausage (1/2 cup; optional)
  • Olive oil or cooking spray
  • Salt (about 1/2 teaspoon) and black pepper (1/4 teaspoon)
  • Garlic powder (1/2 teaspoon) and onion powder (1/2 teaspoon)
  • Optional: paprika or smoked paprika (1/4 teaspoon), fresh herbs (parsley or chives)

Method
 

  1. Prep the pan: Heat oven to 350°F (175°C). Generously grease a 12-cup muffin tin or use silicone liners. This helps prevent sticking.
  2. Sauté veggies (optional but recommended): In a skillet with a little olive oil, cook peppers and spinach 2–3 minutes to remove moisture. Let cool slightly.
  3. Blend the base: In a blender, add eggs, cottage cheese, Greek yogurt or milk (if using), salt, pepper, garlic powder, and onion powder. Blend 20–30 seconds until smooth and frothy.
  4. Stir in mix-ins: Transfer the egg mixture to a bowl. Fold in shredded cheese, cooled veggies, green onions, and cooked protein.
  5. Fill the cups: Divide mixture evenly among muffin cups, filling about 3/4 full. Sprinkle a pinch of paprika on top if you like.
  6. Bake: Bake 18–22 minutes, until the centers are set and just barely jiggle. They will puff in the oven and settle as they cool.
  7. Cool and release: Let sit 5 minutes, then carefully run a knife around the edges to release. Move to a rack to cool completely.
  8. Serve or store: Enjoy warm, or pack for later. Add fresh herbs right before serving for a bright finish.
